CDC finalizes warning on diacetyl

The agency CDC recommends limiting employee exposure to the chemical.

The CDC finalized a warning on November 1, 2016, concerning diacetyl, a chemical that naturally occurs in coffee roasting; it also is released when coffee beans are ground. In addition, diacetyl is produced synthetically and used in foods and drinks to give them a creamy flavor. The chemical presents a danger to workers in a variety of areas of the food and beverage industry, who may contract permanent or deadly lung disease due to inhaling its fumes. CDC recommends limiting employee exposure to diacetyl, testing the air in roasting and manufacturing facilities for the chemical and improving the exhaust and ventilation in these facilities.
