Protecting delicate decorations

Bakery supplier Lucks Food Decorating Co.'s unique product, Edible Image® transfers, are hygroscopic cake decorations that peel off of a liner and adhere to cake frosting in seconds, eliminating the need for in-store bakeries, schools and restaurants to hand decorate cakes.

But the Tacoma, WA-based company found that the flexible bag it was using didn't hold up to the demands of this moisture-sensitive product. The company went to Duralam (Appleton, WI), for a bag with a high barrier and low moisture vapor transmission rate. It's doubled the product's shelf life to 24 months. Duralam provides Lucks with preformed bags, which are made of a proprietary three-ply lamination that includes metallization. The bags have an easy-open tear strip and reclosable zipper. Graphics are flexo-printed in a single color. Pressure-sensitive labels, including inventory information, are both hand- and machine-applied to the bags. Edible Image transfers are sold to foodservice outlets in multipacks of six or 12 each. Once opened, the transfers can be left at room temperature, or refrigerated or frozen to help extend life. Lucks offers over 250 varieties of cake decorations.
