The Dumoulin LogiC 252 automatic coating system is used for chocolate engrossing and varnishing in the same shallow pan. Soft sugar panning can also be done in the pan, which produces finished batches up to 550 lb. The system has a large touchscreen, where all the recipes are saved. Solid drums are used for chocolate engrossing, while perforated drums are employed for hard sugar and hard sugar-free panning. When a batch is finished, the products are quickly discharged underneath the pan into mobile bins. A range of automatic high-capacity panning systems in batch sizes up to 6,600 lb is available.
