Packagers prepare--gluten free market to explode

A new report by Packaged Facts says the market for gluten-free foods and beverages in the U.S., currently at almost $700 million, is expected to explode to $1.7 billion by 2010, according to an article on foodnavigator-usa.com.

Gluten-free products are alternatives to traditional grain-based products like bakery, pasta and cereals and are made with alternative grains and flours, such as rice, corn, amaranth and quinoa. Demand for gluten-free products will grow with increased diagnosis of celiac disease, expected to increase worldwide by a factor of 10 during the next few years. Food marketers are waiting on the FDA to finalize what "gluten free" really means. Will these new products be packaged in the same old way? Or will materials with different barrier properties be needed?
