Several years of sustained growth led Grillo’s Pickles to invest in manufacturing more of its own products. The company’s new 155,000-sq-ft plant in Taylorsville, Ind., adds capacity while supporting its move toward greater self-manufacturing.
“Grillo’s has had tremendous growth over the last several years and that growth has been consistent,” says Bill Russell, Chief Operating Officer. “And really to protect the business we recognized the need to get into self-manufacturing.”

Grillo’s announced the $54 million project in 2025, selecting a site along I-65 in Bartholomew County. CEO Adam Kaufman said the company wanted a central U.S. location with a skilled workforce and a supportive business environment. The property sits beside a planned King’s Hawaiian bakery, part of parent company Irresistible Foods Group’s strategy to develop the site in phases.
The investment supports a product whose refrigerated handling extends beyond the plant. Grillo’s uses a century-old family recipe without artificial preservatives. Its pickles remain refrigerated from packing through sale, making freshness a consideration as the company expands its national reach.

For Grillo’s, selecting suppliers involved more than assessing equipment capabilities. Russell says the company wanted a partner that understood its priorities, particularly protecting employees and maintaining food safety. Product quality also remained central to the project.
