
As the alternative protein market grows and evolves, Seattle-headquartered plant-based meat manufacturer Rebellyous Foods is keeping up by using its own cutting-edge technology.
In September 2024, Rebellyous installed its Mock 2 production line system at its partner RMS Foods’ manufacturing facility in New Mexico. Since then, the integrated system has allowed the company to experience the benefits of automation, cost savings, and enhanced quality of its products.
Rebellyous previously used conventional food production equipment designed for animal-based meat processing, which included traditional mix and form batch production. The machinery allowed the company to bring its products to market but presented several challenges, including labor-intensive processes, inefficiencies in throughput, material waste, and higher costs associated with small-batch production, according to Christie Lagally, founder and CEO.
The Mock 2 production system sought to remedy such challenges and addresses needs in the plant-based meat market.
“The inspiration for Mock 2 came from our goal to revolutionize plant-based meat production, making it more scalable, efficient, and most importantly, cost-effective. We wanted to overcome the limitations of off-the-shelf equipment and create a system designed from the ground up for plant-based products. This allows us to achieve price parity with traditional chicken while maintaining exceptional quality and consistency,” Lagally tells ProFood World.
