Built for patisserie products, the Mecatherm line has a cooling circuit completely independent from the baking circuit. Products are removed from the baking trays and then placed on dedicated cooling trays just after leaving the oven. The dual-infeed freezer can receive products coming from the line or can be used as a standalone unit. The Mecapatisserie baking production line also is equipped with a tray washer, which can clean the baking trays, as well as the cooling supports, and a storage gantry for automatic tray changeovers.
